Strawberry Cake

Here in Baguio City, there’s a famous bakeshop and restaurant that sells the best strawberry cake in town. Tonight, my mom and sister decided to bake one using boiled icing instead of frosting.




1 1/2 cups granulated white Sugar
2 tsp strawberry-flavored Gelatin
1 cup unsalted Butter (softened)
4 Large Eggs

2 3/4 Cake Flour
2 tsp Baking Powder
1 cup Fresh Milk
1 tbsp Vanilla Extract
1/2 cup sweetened Strawberry Puree


  1. Pre-heat the oven to 240 degrees Celsius.
  2. In a large bowl, cream together the butter, sugar and strawberry gelatin until light and fluffy. Beat in eggs one at a time, mixing well after each. Combine the flour and baking powder; stir into the batter alternately with the milk. Blend in vanilla and strawberry puree. Divide the batter evenly between the prepared pans.
  3. Bake for  25 minutes.
